Micro-organisms in food can be destroyed by subjecting them to high temperatures. Once food has been processed in this way, it will keep for a long time without spoiling provided that it is in a sterile, sealed container. There are two methods of preserving food by heating: pasteurization and canning. Pasteurization was named after Louis Pasteur, the famous French Chemist -bacteriologist.
